Chargrilled Strips Spring Salad with Asparagus
This delicious recipe consists of variety of vegetables and plant-based Harvest Gourmet Chargrilled Strips, great dinner not only for vegetarians!
Ingredients

2 bunches asparagus, trimmed

2 tbsp olive oil

100 g snow peas, washed

1 head of butter lettuce, washed, leaves separated

1 bunch of radishes, washed, trimmed, sliced thinly

2 spring onions, sliced thinly

1/2 cup (95g) Greek yoghurt
-
2 tbsp finely grated Parmesan cheese
-
1 tsp dijon mustard
-
1 tsp dried tarragon
-
½ lime, squeezed
Preparation

1Cook asparagus on chargrill or pan for 3-4 minutes, or until lightly charred and tender crisp, brushing occasionally with oil. Add snow peas to pan, and heat through until tender. Transfer to serving plate and arrange with lettuce, radish and spring onions.

2In same char grill or pan. Cook the Harvest Gourmet Chargrilled Strips, brushing occasionally with remaining oil for 4-7 minutes, turning occasionally .

3Meanwhile, mix the yoghurt, parmesan cheese, mustard, tarragon and lime juice into a dressing. Spoon the Harvest Gourmet Chargrilled Strips over the the salad and add the dressing.
